I hope you had a wonderful Christmas. I spent almost the entire day cooking and preparing for dinner at 5. It was so perfect to have three generations of us around the table. And after everyone had gone home and everything was cleaned up, I realized why neither Mom nor Shirley (Mike’s mom) complained when we asked if they wanted us to host Christmas dinner this year. I’m going to have to start training now for next year, I think.
Even though everyone brought food, I was still responsible for a lot. I made 4 pans of macaroni and cheese (1 for dinner, 1 for Steph that was dairy free, 1 for Mike in case we didn’t have leftovers, and 1 for whichever boy asked for it first. This year it was Jon, but Wes got a ton of leftovers too.) I also made a stuffed “Tofurkey” with vegan gravy for Jon; green beans with bacon, shallots and almonds – plus another in a vegan version; stuffing, sauerkraut, mashed potatoes, fruit salad, ham, salmon, rolls and I can’t remember what else. I could have handed off the mac & cheese to one of the moms, but, well, mine’s the best. (Family joke!) I need to watch out, however, because Jon’s is pretty good, too.
The girls amazed me with their contributions. Steph made the best deviled eggs, and Rachel’s peanut butter pies got eaten so fast, I wasn’t sure some people even saw them. And, of course, the moms and my Aunt Ruth brought some of our favorites – homemade applesauce (and turkey and gravy) from Mom, a yummy cranberry salad from Mike’s mom and mashed sweet potatoes from my aunt. The best thing is everyone – especially Wes – will have a stocked fridge for a few more days.
It was fun, and I wouldn’t have changed a thing. The whole time I was cooking, I was rejoicing that I had electricity. My dear friend Susan has been without power for 4-5 days, and still prepared a Christmas meal for 14. She’s pretty amazing.
