Wacky & Applesauce Cakes

Mom’s Applesauce Cake
1 1/2 c flour
1 c sugar
1 tsp soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp vinegar
4 Tbsp oil
1 c applesauce
1 tsp vanilla

Sift dry ingredients into a greased 8 inch pan.  (This is important.  I
didn’t grease last time and it really stuck!  Still tasted ok,
though.)  Make 3 depressions.  Put oil in one, vinegar in one and
vanilla in one.  Pour applesauce over mixture; mix well.  Bake 30
minutes at 350 degrees.  Serve from same pan.

**Note:  1/2 c each of chopped nuts and raisins may be added to the cake before baking.  Mix in well.

1/3 c vegetable oil
1 Tbsp vinegar
2 tsp vanilla
1 c water

Sift dry ingredients into a greased 8 ince pan.  Make 3 depressions.  Put oil in one, vinegar in one and vanilla in one.  Pour water over mixture; mix well.  Bake 30 minutes at 350 degrees.  Serve from same pan.
